Abatte
Abatte (z fr. battre, “bić” lub abattre; wymowa uproszczona [abat]) – we francuskiej sztuce kulinarnej jest to rodzaj noża. Szeroki, raczej gruby nóż o podwójnym ostrzu, używany do spłaszczania/ubijania mięsa. W Polsce niekiedy jako “nóż holendrowy” (informacja niepewna), także zbliżone angielskie beater knife.
Etymologia niepewna, zapewne od francuskiego czasownika abbattre, wieloznacznego: w tym “ubić”, “ścinać”, “zestrzelić”, lub też battre, np. “bić”, o tym samym rdzeniu. Abbatre to także “zabić zwierzę” (np. abbatre un boeuf). Słowo bardzo rzadkie, wśród poważniejszych źródeł podaje je właściwie tylko “The New Larousse Gastronomique”, być może jako zaczerpnięte ze slangu kuchennego.
